Our cooking and recipe thread!
Thanks for the idea @youbetcha!
Do any fellow snarkers here have a good recipe for pizza? A really good one. From crust to sauce to toppings. I do not have any food allergies. Thank you!
Does anyone have a good recipe for German potato salad? My aunt used to make it and hers was delicious; sadly, I didn’t get the recipe before she passed on.
I’ve tried German potato salad recipes from a few websites. The results were decent but they didn’t taste like my aunt’s.
The only German potato salad I’ve seen at the supermarkets is Read’s (comes in a can). It’s not bad but a little too sour for my taste. My aunt’s version was tangy with just a hint of sourness.
If you have a good recipe, please share it and I promise to give it a try. Thank you!
Count me in too @Yinzer! A true German potato salad recipe would be awesome.
here is a great one I make every friday night:
oven @ 375 for 10 minutes … maybe less!
Friday Night Pizza sounds good to me! I like your recipe @Phony_Baloney. I think I just need the mozzarella from the deli and I’m all set…so it’s actually looking like Monday Night Pizza ha haha. Thanks PB!
you are most welcome … i am in new jersey … so great fresh daily made mozzarella is everywhere
Wow I love that! The birthplace of Mr Frank Sinatra
!
Oh I forgot to ask you how much sauce do you think is the right amount?
I really do want a good pizza but I’m not the best cook and I never guess right when it comes to amounts.
Friday Night Pizza sounds really good to me. Actually, Every Night Pizza sounds good to me!
Yes most definitely! Pizza is awesome
it all depends on the size of the artisan crust you buy … i like these:
Stonefire artisian pizza crusts
they are nice and thin with some nice bubble pockets here and there … as for the sauce … I like this:
fired roasted pizza sauce
it can be a little spicy, so I spread it kinda thin!
its awesome with just a little black pepper and olive oil on top after cooked.
great with a cold hard cider or beer … or for me lately … Spanish champagne!!
here is the absolute best Spanish Champagne:
Freixenet Extra Dry Cordon Negro Cava
sorry the hyperlinks take you off the forum but just click the back in your browser to come back here. I got to get with betty to see if we can get a pop out window or open a new tab for embedded hyperlinks…
I really love the Naan Bread and the small artisan pizza crusts from Aldi’s. They’re fabulous for making homemade pizzas.
Thank you PB! Now I really want to try the Spanish champagne too!
I’m going to use your post as my shopping list. I like the idea of the whole thing. Hope it turns out as good as it sounds. I have a tendency to use too much of everything and then it’s a disaster, but your recipe is pretty straightforward. Thank you!
Love Naan bread. Love this idea! I’m going to make the pizza as per @Phony_Baloney and buy some Naan bread for second helpings…because I know I’ll want more.
Thank you for a new pizza idea @JustPlainNutz!
I use Naan as well! Plus they fit in my air fryer. It’s 7am so too early for pizza?
Yes, I made and enjoyed the pizza! I was so used to ordering pizza…wow, what a difference. Thank you @Phony_Baloney!
Do you have a good spaghetti recipe for me? I’d like to try actually making the sauce.
So I boiled water and now think I can cook (not).
Maybe homemade sauce is too much of a reach?
Also, does anyone have a recipe for German potato salad for @Yinzer and me?
Thank you!
Here’s how I make homemade sauce. This is not a super rich Sunday sauce, not like Rao’s, more delicate and light, perfect with any pasta and some fresh parm.
1 28oz can WHOLE San Marzano tomatoes (actual San Marzano from Italy, not “in the style of”) I use the Cento brand in the yellow can. You can just double the recipe as needed.
Pour the tomatoes, juice and all, into a mixing bowl and with clean hands, gently crush the tomatoes to your liking. I like more texture and find the pre-crushed tomatoes are too uniform for a homemade sauce.
In a pan on medium low heat, saute a few cloves of fresh chopped garlic in good olive oil until fragrant.
Pour in the tomatoes, they will splatter if it’s too hot just FYI. Let simmer for 15-20 minutes stirring often.
Add sea salt to taste. Tear up some fresh basil leaves and throw them in towards the end.
You can adjust any of this to your liking. I’ll add extra garlic and a pinch of red pepper flakes. Recommend drizzling the finished pasta with some good olive oil. De Cecco brand pasta cooked al dente… well, now I know what I’m having for dinner! Thank you!
This easy prep meal is Korean meatballs and tofu from Trader Joe’s.
Ingredients:
1 bag of mini meatballs
1 package of tofu - medium firm
Korean style sauce
Grape jelly
2 cloves garlic
Grated ginger
A little green onion for on top after cooking
*Put meatballs in pot
Add 3 - 4 tbs of Korean sauce, 2 tbs grape jelly,
2 cloves minced garlic, 1 tsp grated ginger, 1 tsp brown sugar (you don’t need this but I like sweet)
1/4 to 1/2 cups of water.
*bring to boil lower to a simmer for 40 mins, stir every 10 minutes so each meatball gets covered with sauce.
*cut your tofu add to the top of meatballs and simmer that for about 10-15 mins, making sure to ladle sauce over the tofu as it warms up.
Serve with rice and veggies-I have green onion on a meatball that kind of melted it looks gross but it’s good! I’ve estimated the amounts of ingredients omit or add more to your taste.
****if you’re not near a trader Joe’s no worries substitute Korean sauce with any kind of bottled teriyaki sauce.
